Artichoke Hummus

Hummus makes a fantastic snack. Here’s a jazzed-up version perfect for a party or just to break up the monotony of your lunch box. For a brighter flavor add the whole three tablespoons of lemon juice, for a bit more mild and less lemony flavor, just add two tablespoons of lemon juice. Either way it’s delicious!

Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 can artichoke hearts, drained
  • 2 Tbsp tahini
  • 3 Tbsp olive oil
  • 2 cloves garlic
  • 2-3 Tbsp lemon juice

Directions

Place all ingredients in a blender or food processor and blend until smooth.
